Spicy Chilli and Coriander Cheese on toast!

This is great light lunch or supper dish. You can of course use other combinations of cheese and or additional toppings.

2 People – makes 4 slices.

Ingredients – Use Organic produce where possible.

  • 200 – 250g grated cheddar (A good strong cheddar or a mix with chilli cheddar)
  • 20g spring onion finely chopped
  • ½ tomato or whole midi tomato to taste
  • ½ tsp. finely sliced chilli or to taste
  • salt and pepper
  • 4 slices of chunky bread or a baguette sliced lengthways into 2.

Method

  1. Heat oven to 200°C/400°F/Gas 6.
  2. Mix all the prepared ingredients together and pile evenly on top of the bread
  3. Bake in the oven for 2 – 5 minutes or until crisp and brown on sides.
  4. Serve immediately and enjoy.
